ABOUT THE PRODUCER
Hachi Coffee Project is an incredible collective made up of Diego Bermudez, Matheus Antonaci, Allan Hartmann, and Diana Hartmann. They run six total farms for Hachi alone (and at least two others for their personal companies), three in Panama, and three in Colombia. Hachi focus on applying a science based approach to coffee, blending molecular biology with field application, centering sustainability, transparency, consistency, and scientific achievement.
This particular coffee was grown at their farm Rocky Mountain, in Panama. This lot has been dubbed "Kokutan batch. 1218" by Hachi, and "Hachi Maragogype Natural #17" by Forward.
Kokutan means ebony in japanese, and Hachi describe the symbolism: "the deep, rich notes of cocoa and black fruits, evoking the dense, dark, and luxurious quality of ebony wood, fitting for a premium Panama Maragogipe"
Hachi's description of the farm:
"Rocky Mountain Farm -Renacimiento, Chiriqui, Panama (Volcan Region) 1.400 - 1.600 M.A.S.L.
Nestled in the heart of the Chiriquí highlands, Rocky Mountain Farms lie within one of Panama’s most biodiverse and climatically stable coffee-growing regions. Situated between 1,400 and 1,600 meters above sea level, these farms are nourished by mineral-rich volcanic soils originating from the Barú volcano system—a geologic feature that contributes to exceptional nutrient availability and ideal drainage.
The region benefits from a unique confluence of Pacific and Caribbean climatic influences, creating a predictable seasonal rhythm with defined wet and dry periods, steady temperatures, and soft cloud coverage. These conditions support gradual cherry development, minimizing stress during ripening and preserving the natural sugars and organic acids that shape cup expression.
Rocky Mountain maintains a balanced agricultural design that integrates multi-varietal cultivation with agroforestry corridors, reforestation efforts, and shade-regulated plots, promoting not only biodiversity but also soil moisture retention and resilience to weather variability. The farm serves as a central node in Hachi’s Panamanian model —a scalable foundation for producing high-quality lots with consistency, traceability, and ecological sensitivity."
At Quanta, we've had our eyes on Hachi for a while, we truly appreciate their breakdowns of microbiology in their processing, and are eager to see where their research not only takes them, but also the specialty coffee community as a whole!
